Oatmeal Raisin Cookies

These are Timothy's favorites!

INGREDIENTS

1 cup (1/2 pound or 2 sticks) unsalted butter, softened, OR 1 cup shortening

1 cup brown sugar, packed

1 cup granulated sugar

1 1/2 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking soda

1/2 teaspoon freshly grated nutmeg

1 teaspoon cinnamon

2 large eggs, well beaten

1 Tbsp vanilla

3 cups rolled oats (We use Quaker Quick or Old Fashioned. Do NOT use instant.)

1 1/2 cups raisins

1/2 cup chopped walnuts (optional)

1 Pre-heat oven to 350 degrees. Grease two large cookie sheets or line with Silpat, parchment paper or waxed paper.

2 In a large mixing bowl, beat butter until creamy. Add sugars; beat until fluffy, about 3 minutes. Beat in eggs. Add vanilla.

3 Mix flour, salt, baking soda, cinnamon, and nutmeg together in medium bowl. Stir dry ingredients into butter-sugar mixture. Stir in raisins and nuts. Stir in oats.

4 Spoon out dough by large tablespoonfuls onto prepared cookie sheets, leaving at least 2 inches between each cookie.

5 Bake until cookie edges turn golden brown, 10-12 minutes. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Cauliflower Soup

This is from the kitchen of my good friend Rachel.

2 cups chicken broth
2 8 oz packages frozen cauliflower
1 medium stalk celery
1 medium carrot
1 small onion
1/2 tsp thyme
salt and pepper
1 cup milk
1 1/2 cup cheese

All ingredients into a crock pot except milk and cheese. Cook on low for 4-6 hours. Use potato masher to mas veggies. Add milk and cheese. Heat soup until cheese starts to melt.

She also adds garlic to the mix, and you can cook it on the stove, just let it boil until the veggies are nice and soft.
** I am allergic to celery so I just leave it out.

Tilapia with dill cream sauce

Ingredients:

4 (4 ounce) fillets tilapia

butter flavored cooking spray
4 teaspoons margarine, melted
1 tablespoons lemon juice
2 tablespoons chopped fresh dill weed
2 tablespoon lemon-pepper seasoning

4 teaspoons cream cheese
3 tablespoons lemon juice, or to taste
2 tablespoons chopped fresh dill weed



Directions:
Preheat the oven to 375 degrees F (175 degrees C).
Grease a baking sheet with cooking spray. Place the tilapia fillets on the sheet, and coat them lightly with cooking spray. Spoon the melted margarine over each fillet, then drizzle with 2 tablespoons of lemon juice. Season with lemon pepper and 2 tablespoons of dill.
Bake for 15 minutes in the preheated oven, or until the fish is opaque and flakes easily.

While the fish is baking, combine the cream cheese, 5 tablespoons of lemon juice and 2 tablespoons of dill in a small bowl. Heat in the microwave for 1 minute and 10 seconds, then stir to blend.
Place fillets onto serving plates, and spoon sauce around them in a decorative fashion and serve.

Goes well with Sauted asparagus or green beans.

Brown Sugar Muffins

This recipe is one you can make the night before, put in the fridge and bake the next morning.

1 Cup Brown Sugar packed Cut together the butter and brown sugar.

1/2 Cup butter softened

-

1 tsp baking soda Dissolve baking soda into milk

1 Cup millk then add to sugar and butter mixture

-

1 egg Beat egg then add to mixture

-

1 tsp vanilla Add to mixture

-

2 Cups flour Add to mixture and stir thoroughly.

-

Place in greased muffin tin. Sprinkle tops with:

1/3 cup Brown sugar and 1/2 tsp of cinnamon mixed

Bake at 350 degrees for 20-25 minutes. Let cool and enjoy!

Easy Parmesan Chicken

I made this for the recent Relief Society broadcast. I thought it was yummy and super easy.

1 Cup Italian Bread Crumbs
1/2 cup grated parmesan
1 tsp garlic powder
3-4 Tbsp Butter or Olive Oil
6 boneless skinless chicken breasts

-Combine bread crumbs, cheese and garlic powder in one bowl.
-Put melted butter in a different bowl.
-Dip chicken in melted butter/olive oil and then into breadcrumb mix
-Place in a lightly greased baking dish and cover loosely with foil.
-Bake at 350 degrees for 35-40 minutes or until juices run clear.

Mom's Kitchen Sink Bread

Mom always forgot to check the cupboards to see if she had all the ingredients BEFORE she started, so she would have to substitute. And at one time or another she substituted everything but the kitchen sink....hence the name.

1 Cup white flour
1 Cup whole wheat flour
1/2 cup oatmeal Mix dry ingredients together
1/2 tsp salt
2 Tblsp sweetner ( sugar, honey, brown sugar)
1 Tblsp yeast

3 Tblsp fat (butter, margarine, lard) Cut into dry mix

2 Cups WARM water from the tap, should feel really warm
1 egg Mix together and add to dry mix

Beat batter with a whip or electric beater until smooth. Mix in more flour using a wooden spoon until dough forms a soft ball around the spoon. Knead 8-10 minutes sprinkling on flour as needed until the dough feels like a baby's bottom. Cover and let rise in a warm spot for 1 hour. Punch down and divide and shape into loaves, rolls, or breadsticks. Cover and let rise again for one hour.

Bake at 375 degrees for 15-25 minutes for rolls, breadsticks or small shapes.
Bake at 400 degrees for 35-40 minutes for loaves.

Cool before slicing....assuming you can keep people away from it long enough.


Additional ideas:

Add Italian seasoning for breadsticks to go with spaghetti or lasgana.

Add pumpkin spice, or cinnamon and nutmeg for a spiced bread. Great with apple butter!

Roll dough out and spread with butter, brown sugar and cinnamon. Roll up and cut into cinnamon rolls.

Divide into roll size and roll out flat. place ham and cheese in the center, fold over and pinch closed for ham and cheese pockets.

** You can substitute any flour. In a pinch I have put oatmeal or cereal in my food processor and ground it into "flour"and used it.
